Ingredients

  • Bread flour – 1 cup (120g)
  • All-purpose flour – 3/4 cup (95g)
  • Kosher salt – 2 tsp
  • Baking soda – 1 tsp
  • Unsalted butter – 1 cup (225g), browned
  • Dark brown sugar – 1 cup (200g), packed
  • White sugar – 1/2 cup (100g)
  • Vanilla extract – 2 tsp
  • Espresso powder – 1 tsp
  • Large egg – 1 whole + 1 yolk
  • Semi-sweet chocolate chips – 1/2 cup (90g)
  • Dark chocolate chunks – 5 oz (140g)

Procedure

Step 1: Prepare Oven

  1. Preheat oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.

Step 2: Mix Dry Ingredients

  1. In a medium bowl, whisk together bread flour, all-purpose flour, salt, and baking soda. Set aside.

Step 3: Make Butter-Sugar Mixture

  1. Brown the butter in a saucepan until golden and nutty. Let it cool slightly.
  2. In a large bowl, combine browned butter, dark brown sugar, and white sugar.
  3. Beat until creamy and well combined.

Step 4: Add Wet Ingredients

  1. Mix in vanilla extract and espresso powder.
  2. Add the egg and extra yolk, whisking until smooth and glossy.

Step 5: Combine and Fold

  1. Gradually fold in dry ingredients until just combined (do not overmix).
  2. Stir in chocolate chips and chunks evenly.

Step 6: Bake

  1. Scoop dough (about 2 Tbsp per cookie) onto prepared baking sheets, leaving space between each.
  2. Bake at 350°F for 12–14 minutes, until edges are golden but centers are slightly soft.
  3. Let cookies cool on the tray for 5 minutes, then transfer to a wire rack.

Notes

  • Browning the butter gives the cookies a nutty, caramel-like flavor.
  • For extra chewy cookies, chill the dough for 30–60 minutes before baking.
  • Sprinkle cookies with flaky sea salt before baking for a gourmet touch.
