Ingredients
- Bread flour – 1 cup (120g)
- All-purpose flour – 3/4 cup (95g)
- Kosher salt – 2 tsp
- Baking soda – 1 tsp
- Unsalted butter – 1 cup (225g), browned
- Dark brown sugar – 1 cup (200g), packed
- White sugar – 1/2 cup (100g)
- Vanilla extract – 2 tsp
- Espresso powder – 1 tsp
- Large egg – 1 whole + 1 yolk
- Semi-sweet chocolate chips – 1/2 cup (90g)
- Dark chocolate chunks – 5 oz (140g)
Procedure
Step 1: Prepare Oven
- Preheat oven to 350°F (175°C).
- Line baking sheets with parchment paper.
Step 2: Mix Dry Ingredients
- In a medium bowl, whisk together bread flour, all-purpose flour, salt, and baking soda. Set aside.
Step 3: Make Butter-Sugar Mixture
- Brown the butter in a saucepan until golden and nutty. Let it cool slightly.
- In a large bowl, combine browned butter, dark brown sugar, and white sugar.
- Beat until creamy and well combined.
Step 4: Add Wet Ingredients
- Mix in vanilla extract and espresso powder.
- Add the egg and extra yolk, whisking until smooth and glossy.
Step 5: Combine and Fold
- Gradually fold in dry ingredients until just combined (do not overmix).
- Stir in chocolate chips and chunks evenly.
Step 6: Bake
- Scoop dough (about 2 Tbsp per cookie) onto prepared baking sheets, leaving space between each.
- Bake at 350°F for 12–14 minutes, until edges are golden but centers are slightly soft.
- Let cookies cool on the tray for 5 minutes, then transfer to a wire rack.
Notes
- Browning the butter gives the cookies a nutty, caramel-like flavor.
- For extra chewy cookies, chill the dough for 30–60 minutes before baking.
- Sprinkle cookies with flaky sea salt before baking for a gourmet touch.
