Ingredients
For the Churros
- Water – 150ml
- Granulated sugar – 20g
- Unsalted butter – 40g
- All-purpose flour – 110g
- Large eggs – 2
- Cooking oil – for frying
For the Hot Chocolate
- Dark chocolate – 50g
- Granulated sugar – 25g
- Milk – 120ml
- Cornstarch – 4g (about 1 tsp)
- Water – 10ml
Procedure
Step 1: Make the Churro Dough
- In a saucepan, combine water, sugar, and butter. Bring to a gentle boil.
- Lower the heat and add the flour all at once. Stir constantly over low heat for about 3 minutes until the dough forms a smooth ball.
- Remove from heat and let the dough rest for 10 minutes to cool slightly.
- Beat in the eggs one at a time until the dough is smooth and pipeable.
- Transfer to a piping bag fitted with a star nozzle.
Step 2: Fry the Churros
- Heat cooking oil in a deep pan to 350°F (175°C).
- Pipe lengths of dough (about 4–5 inches) directly into the hot oil, cutting with scissors.
- Fry until golden brown and crisp, about 2–3 minutes per side.
- Drain on paper towels. (No cinnamon-sugar coating — serve plain for authenticity.)
Step 3: Make the Hot Chocolate
- Heat the milk with sugar in a small saucepan until warm.
- Add the chopped chocolate and stir until melted.
- Mix cornstarch with 10ml water to make a slurry, then whisk into the chocolate mixture.
- Cook over medium heat until thickened and glossy.
Step 4: Serve
- Serve warm churros with small cups of thick hot chocolate for dipping.
Notes
- Authentic Spanish churros are usually not coated in cinnamon sugar — they’re served plain with chocolate.
- The dough can be made without eggs for an even more rustic version (just flour, water, salt, and sugar).
- Best eaten immediately while warm and crisp.
