Juicy and flavorful dumplings filled with a savory mixture of minced chicken, shrimp, herbs, and seasonings, wrapped in tender dumpling wrappers. Perfect as an appetizer, snack, or even a light meal.

Ingredients

Filling

  • Minced chicken – 1/2 cup
  • Minced shrimp – 1/2 cup
  • Ginger paste – 1 teaspoon
  • Garlic paste – 1 teaspoon
  • Soy sauce – 1 tablespoon
  • Lemon juice – 1 teaspoon
  • Fish sauce (optional) – 1/2 teaspoon
  • White pepper – 1/2 teaspoon
  • Chicken bouillon powder – 1 teaspoon
  • Sugar – 1/2 teaspoon
  • Salt – 1/2 teaspoon or to taste
  • Cornstarch – 1 tablespoon (omit if using egg)
  • Egg (whole) – 1 (optional, use instead of cornstarch)
  • Green scallion (chopped) – 2 tablespoons
  • Sesame oil – 1 teaspoon
  • MSG – a pinch (optional)
  • Szechuan peppercorn (ground) – 1/4 teaspoon
  • Green chilies (finely chopped) – 1 teaspoon
  • Cooking oil – 1 tablespoon
  • Shredded cabbage – 1/4 cup
  • Shredded carrot – 1/4 cup
  • Shredded mushroom – 1/4 cup (optional)

Wrapper

  • Store-bought dumpling wrappers – as needed

Steps

Prepare the Filling

  1. In a large bowl, combine minced chicken, shrimp, and all other filling ingredients.
  2. Mix thoroughly until everything is well incorporated.
  3. Cover and refrigerate for 15–30 minutes to let flavors develop.

Assemble the Dumplings

  1. Take one dumpling wrapper and place a small spoonful of filling in the center.
  2. Moisten the edges with water and fold the wrapper to seal. Pleat as desired.
  3. Repeat with the remaining wrappers and filling.

Cook the Dumplings

  1. Steam Method: Place dumplings on parchment paper or a greased steamer tray. Steam for 8–10 minutes or until cooked through.
  2. Pan-Fry Method: Heat oil in a non-stick pan. Place dumplings flat-side down, cook until golden brown. Add a splash of water, cover, and steam for 6–8 minutes until done.

Notes

  • You can freeze assembled dumplings for later useβ€”just steam or pan-fry directly from frozen.
  • Adjust chili and pepper to your heat preference.
  • Cornstarch or egg helps bind the fillingβ€”use one, not both.
  • Ensure wrappers are well-sealed to avoid bursting during cooking.

  • Soy Sauce – 1/4 cup
  • Diced Hot Chili – 2 tsp
  • Diced Cilantro – 1 tbsp
  • Diced Scallion – 1 tbsp

  • Sesame Oil – 1.5 tsp
  • Water – to adjust the saltiness

Tip: Let it rest for a few minutes before serving to enhance the flavor.

  • Toasted Sesame Seeds – 1/2 tsp
  • Optional Sugar – a pinch (to balance flavors)
