Juicy and flavorful dumplings filled with a savory mixture of minced chicken, shrimp, herbs, and seasonings, wrapped in tender dumpling wrappers. Perfect as an appetizer, snack, or even a light meal.
Ingredients
Filling
- Minced chicken β 1/2 cup
- Minced shrimp β 1/2 cup
- Ginger paste β 1 teaspoon
- Garlic paste β 1 teaspoon
- Soy sauce β 1 tablespoon
- Lemon juice β 1 teaspoon
- Fish sauce (optional) β 1/2 teaspoon
- White pepper β 1/2 teaspoon
- Chicken bouillon powder β 1 teaspoon
- Sugar β 1/2 teaspoon
- Salt β 1/2 teaspoon or to taste
- Cornstarch β 1 tablespoon (omit if using egg)
- Egg (whole) β 1 (optional, use instead of cornstarch)
- Green scallion (chopped) β 2 tablespoons
- Sesame oil β 1 teaspoon
- MSG β a pinch (optional)
- Szechuan peppercorn (ground) β 1/4 teaspoon
- Green chilies (finely chopped) β 1 teaspoon
- Cooking oil β 1 tablespoon
- Shredded cabbage β 1/4 cup
- Shredded carrot β 1/4 cup
- Shredded mushroom β 1/4 cup (optional)
Wrapper
- Store-bought dumpling wrappers β as needed
Steps
Prepare the Filling
- In a large bowl, combine minced chicken, shrimp, and all other filling ingredients.
- Mix thoroughly until everything is well incorporated.
- Cover and refrigerate for 15β30 minutes to let flavors develop.
Assemble the Dumplings
- Take one dumpling wrapper and place a small spoonful of filling in the center.
- Moisten the edges with water and fold the wrapper to seal. Pleat as desired.
- Repeat with the remaining wrappers and filling.
Cook the Dumplings
- Steam Method: Place dumplings on parchment paper or a greased steamer tray. Steam for 8β10 minutes or until cooked through.
- Pan-Fry Method: Heat oil in a non-stick pan. Place dumplings flat-side down, cook until golden brown. Add a splash of water, cover, and steam for 6β8 minutes until done.

- You can freeze assembled dumplings for later useβjust steam or pan-fry directly from frozen.
- Adjust chili and pepper to your heat preference.
- Cornstarch or egg helps bind the fillingβuse one, not both.
- Ensure wrappers are well-sealed to avoid bursting during cooking.
Dipping Sauces for Dumplings

- Soy Sauce β 1/4 cup
- Diced Hot Chili β 2 tsp
- Diced Cilantro β 1 tbsp
- Diced Scallion β 1 tbsp
- Sugar β 1/2 tsp
- Sesame Oil β 1.5 tsp
- Water β to adjust the saltiness
Tip: Let it rest for a few minutes before serving to enhance the flavor.

- Soy Sauce β 2 tbsp
- Chinese Black Vinegar β 1 tbsp (or rice vinegar)
- Chili Oil (with flakes) β 1 tbsp
- Garlic (finely chopped) β 1 tsp
- Green Onion (chopped) β 1 tbsp
- Toasted Sesame Seeds β 1/2 tsp
- Optional Sugar β a pinch (to balance flavors)
Tip: Great with pan-fried or steamed dumplings. Add more chili oil if you like it spicier.
